It's been an exciting journey for Chef Greg Paggeot, but he's finally got the doors open on his newest adventure, the opening of Elysium in Downtown Kalamazoo. Chef Greg, formerly of Four Roses in Plainwell, has officially opened the doors and is already working on stocking up his wine list. Many residents are urging him to stay local, considering how many wineries we have in Southwest Michigan. When it came to moving into the location at 505 East North St., Chef Greg says it was the residents with the area that drew his final decision:

About six years ago I started looking seriously (for buildings.) There were a couple buildings in Allegan that didn’t happen for me so I expanded my search and found this building in Kalamazoo. I really liked this spot, the feel of this place, but I wasn’t familiar with this part of Kalamazoo, so I talked to the people who were. It’s an up-and-coming location and a good spot for a restaurant, so I went with it.

What Do They Specialize In

The menu is expected to be quite eclectic with a lot of fresh seafood, fish, steak and chicken and something for everyone. Chef also said the menu will be relatively small menu because everything is going to be fresh. The menu will change with the seasons, but there will be special dishes daily. Elysium will be wine-focused, with an emphasis on French wine.

What Are Their Hours

Elysium will be open 5pm - 8pm Tuesdays, Wednesdays, Thursdays, Fridays and Saturdays. Beginning March 5th, reservations will be accepted by calling 269-250-4621.
