Science has figured out the best cheeses to make the perfect grilled cheese sandwich.

According to Consumerist, nonprofit group called the American Chemical Society just answered a pretty important question: What's the best type of cheese to use in a grilled cheese sandwich?

They analyzed the properties that make cheese melt in an ideal, gooey way...including the breakdown of proteins and levels of lactic acid. And after a lot of experimenting, the top three cheeses for a grilled cheese sandwich are:  Gouda, gruyere and manchego.

What if you don't have those cheeses in your refrigerator?  Your best bet from those is a mild cheddar.  It won't melt quite as well as those fancy cheeses, but it's better than most of the other options, like my usual American Cheese.
